Marinated Flank Steak

Marinate a flanksteak for several hours or overnight in

1/3 cup olive oil, 1/3 cup soy sauce, 1/3 cup sherry (I have also used rice wine  vinegar with good results, 1-3 cloves garlic minced, 2 T fresh ginger root, minced

Make slashes across steak on both sides to prevent curling.  Broil 3-4 min. on each side.  Carve on Diagonal.  This will be rare– but you really want it rare.

Oven Potatoes

Cut potatoes (I  like yukon gold) into bite sized pieces. Slather generously with olive oil and kosher salt. Cook in a 450 oven for 30 min to an hour until desired crispness is reached.

Spinach Salad with Red Peppers, Tomatoes, and Toasted Pecans

Berry Crisp– so so good!

  1. mmmm…this sounds familiar! I loved this meal so much – I will definitely be trying to make it myself…yum!

We LOVE flank steak – am definitely going to try this one when we get a kitchen again! =) Also try the potatoe recipe with sweet potatoes — I cut them into large speirs and do the same slathering of oil and kosher salt (and occasionally a sprinkling of chili powder or chipotle peper — depending on what we’re having it with).
