Marinated Flank Steak
Marinate a flanksteak for several hours or overnight in
1/3 cup olive oil, 1/3 cup soy sauce, 1/3 cup sherry (I have also used rice wine vinegar with good results, 1-3 cloves garlic minced, 2 T fresh ginger root, minced
Make slashes across steak on both sides to prevent curling. Broil 3-4 min. on each side. Carve on Diagonal. This will be rare– but you really want it rare.
Cut potatoes (I like yukon gold) into bite sized pieces. Slather generously with olive oil and kosher salt. Cook in a 450 oven for 30 min to an hour until desired crispness is reached.
